In a large bowl, mix the ground poultry, onion, celery, and garlic. Mix all the spices together, then add them to the poultry and blend well.<br \/>\nOne at a time, add the rice, the egg whites, and 1 cup of the tomato sauce to the poultry mixture and blend thoroughly. Form the mixture into an oval-shaped loaf and place in the center of a nonstick loaf pan. Spread the remaining \u00bc cup of tomato sauce over the top of the loaf.<br \/>\nBake, uncovered, for 1 \u00bc hours. Let sit for 5 minutes before serving.
